Recipe – Honey Spiced Cookies

‘Tis the season to be jolly and bake and share cookies!
Chef Tomas and Kristyna Reger came up with an ingenious gift idea for our wedding anniversary last summer – a special cookie recipe in a jar with all the primary ingredients! That was really very thoughtful of them and ever so creative. The jar also came with a camel shaped cookie cutter which I know is not easy to find so more brownie (or cookie) points for that.

Spiced honey cookies

In case you’re looking for some last minute quick and easy cookie recipes, here’s the popular honey spiced cookies recipe by Kristyna Reger.
Ingredients
900g all purpose flour
200g butter (salted)
300g icing sugar
1tsp bicarbonate of soda
250g honey
4 eggs
1-2 tbsp cocoa powder
1-2tsp ground spice mix.
Spice mix
½ tsp cloves
1tbsp cinnamon
¼ tsp aniseed
A pinch of star anise and nutmeg powder
Preparation
1. Mix all the ingredients in a blender except the flour.
2. Slowly add the flour, a small batch at a time.
3. Make sure the mix it isn’t too sticky or hard by moderating the amount of flour.
4. Wrap the mix in a cling film and let it rest for at least a day.
Baking
1. Bring the dough to room temperature.
2. Dust the work surface with flour.
3. Roll out the dough to thin sheets that are at least 5mm thick.
4. Cut out the desired shapes and place them on a tray lined with wax sheets.
5. Pre heat the oven to 150 deg Celsius for 10 minutes.
6. Bake at 180 deg Celsius for 10 to 15 minutes depending on the thickness of the cookies.
7. Bake until the cookies turn golden brown.
8. Allow the cookies to rest for a bit before decorating them.

There are different variants of icing to choose from. I quite like the classic yet simple cookie icing with a hint of lemon juice added as recommended by Kristyna.
These cookies were a big hit at home and at work. I’m sure you’ll love them.
